The new smaller particle size distribution for PROBAKE® Calcium Propionate Agglomerate provides numerous advantages to bakers and blenders. Produced by Kemira, this agglomerated version results in a denser product that not only stores more economically – one ton fits on a pallet – but also provides additional value to producers.

For industrial bakers, increased mixing speeds and a trend towards dry addition of ingredients in the dough, call for finer cost-efficient grades with faster dissolution time. For bread improver blenders, the finer grade offers the possibility of reduced dust in the factory by exchanging dusty powders for low-dust fine agglomerate, without having the segregation risk of large particles.

PROBAKE® is an effective inhibitor of the growth of certain moulds and some bacteria. It is widely employed in bread to prevent mould and extend the normal shelf life of the product.

High moisture content of bread encourages the growth of moulds. Moulds are killed during the baking process, but airborne contamination of the bread occurs when it leaves the oven. Mould spores are subsequently picked up from the atmosphere, during and after cooling. Although strict attention to bakery hygiene can significantly reduce contamination, it cannot be completely eliminated. The use of a preservative is therefore beneficial in extending the mould-free shelf life of the product.
